1 red onion
2 tins diced tomatoes (14 oz / 400g); (or 1 tin and 200g refreshing tomatoes)
2 cloves of garlic
100 gr. Greek yogurt
Grated parmesan cheese
Sambal Oelek or a spicy sauce of your decision as garnish
Instructions
Dice the onion and make it on the medium heat inside a big saucepan in olive oil for five minutes. Crush the garlic and add it towards the onions and make for 30 secs.
Then add the tomatoes (fresh and/or tinned) as well as the stock and let it simmer.
After 20 minutes wash and slice the basil and add it to the soup.
If you used fresh tomatoes and don’t want the skin, pluck them out and remove it from your softened tomatoes. Normally leave it in there!
Add the tomato paste, honey and Greek yogurt and mix it smoothly using a hands blender/liquidizer (Mixing the soup is not crucial, but helps it be look nicer)
Add salt to taste and some optional grated parmesan cheese and further basil leaves as garnish.

I believe he’s Filled with it!!! Just about any meal we eat is served sizzling hot!!! IMO soups are ideal for summer!!! My #1 discussion is that they are range top or crock container, and for that reason don’t require warming up the range. (and house!!!!) Confident I’m right!!!
(which doesn’t mean We don’t have soups during summertime)
